Lagavulin 16 vs Talisker 10 Review: Islay Peat, Skye Worm Tubs
I have been drinking peated Scotch for twelve years, and for the first eight I could not have told Lagavulin 16 from Talisker 10 if you had relabelled the glasses. This is either a confession of a poor palate or an argument that Diageo’s two flagship peated malts are more different than the shared “peated coastal” shelf tag suggests. It turns out to be the second one.
Last December I opened both bottles side by side in a Kyoto bar. The bartender, who has been pouring Islay malts since the yen was worth roughly what it is again now, looked at the two glasses and said the same thing every Islay drinker eventually says at that counter: they are both peated, but they don’t taste like each other. He was right, and this article is about why.
Lagavulin’s peat comes from Islay’s coastal bogs at 35 parts per million on the malt. Talisker’s comes from Skye’s upland moor at somewhere between 18 and 20 ppm. The stills at Talisker still condense in worm tubs — the 1830 specification, faithfully rebuilt after the stillhouse burned down in November 1960 — while Lagavulin’s spirit runs through modern shell-and-tube condensers. One assembly is refill sherry heavy; the other is refill ex-bourbon led. The result, in the glass, is dried figs and iodine in one hand and black pepper and brine in the other. Two whiskies from the same corporate ledger, and almost nothing shared under the label.
Two men whose fingerprints are on two very different centuries
Every unchanging bottle has somebody, somewhere, refusing to let it change. On these two, the somebody is different in kind, not just in name.
At Lagavulin, the person who kept the specification steady for the length of a career is Iain McArthur. He first walked through the distillery gates in 1970, still a teenager. He was a cask stenciller before he was a warehouseman, and a warehouseman for longer than most people spend at any job. Fifty-three years, one distillery, one specification file. In that stretch the phenol level of the malted barley coming in the door held at thirty-five parts per million, the cask assembly — refill European oak sherry butts and refill American oak hogsheads, no first-fill in the sixteen-year — did not move, and the cut points on the spirit still stayed where they had been set at the 1988 Classic Malts launch. McArthur closed the warehouse door behind him for the last time at the end of 2023. Diageo bottled a single-cask Iain’s Farewell Dram to see him off. The back label of Lagavulin 16 does not name him.
At Talisker, the equivalent stretch of continuity is a hundred and ninety years long and the fingerprints on it belong to men who have been dead for over a century. Hugh and Kenneth MacAskill, sons of a parish doctor on the island of Eigg, acquired a twenty-acre site at Carbost on the shore of Loch Harport in 1829 and opened the distillery in 1831. Their business model on the estate involved evicting the existing tenants as part of the wider Highland Clearances, and by 1848 the bank was running their distillery. The specifications they set — five stills in a 2:3 ratio inherited from the pre-1928 triple distillation regime, worm-tub condensers, an inverted-U wash-still lyne arm with a purifier pipe — outlived them by nearly two centuries. When the stillhouse burned down in 1960, the Distillers Company Limited could have taken the fire as an opportunity to rationalise the plant into a 2:2 shell-and-tube configuration. It chose to re-fabricate the entire nineteenth-century layout, purifier pipes and worm tubs included. The bottle you are drinking is a company decision, made in 1962, to not modernise a distillery whose founders were both bankrupt within eighteen years of building it.
One whisky is the record of fifty years of one man’s refusal to change what he did not personally design. The other is the record of a company’s stubborn faithfulness to two men whose broader legacy would embarrass any modern marketing team. Neither continuity is romantic. Both continuities are visible in the glass.
The person officiating over the cask policy on both sides for a long stretch, incidentally, was the same man: Jim Beveridge, the Diageo master blender who signed off Lagavulin’s assembly and Talisker’s for roughly twenty years before he retired in 2021. His job at both distilleries was less to design and more to protect. Different distilleries, different continuities, one signature.
Two peats that are not the same plant
“Peat” reads on the label like one thing. Chemically, it is not.
Islay peat is what you get when a coastal bog off the Atlantic accumulates several thousand years of decomposed grasses, sphagnum moss, and salt-laden vegetation, cut and dried and then burned under the drying kiln to smoke the germinated barley. The pyrolysis products drift into the malt as a family of phenolic compounds heavy in guaiacol and syringol, with a supporting cast of cresols and 4-vinyl guaiacol. That composition reads on the nose as iodine at low concentration, creosote from a treated fence post, and the smell of a beach bonfire ten minutes after the last log has been thrown on.
Skye peat, cut from the upland moor at Loch a’ Bhraghad, is a different plant compost. The vegetation is upland heather and sphagnum rather than coastal grasses, and the resulting phenol spectrum leans on cresol and heather-derived compounds rather than guaiacol. What you smell on Talisker is closer to cool ash on a stone hearth and the dusty middle of a black peppercorn than to Lagavulin’s iodine-and-tar signature. There is a maritime salinity in both — because both islands are surrounded by cold Atlantic water — but the underlying phenol library is not shared.
That is soil chemistry, not marketing. And Diageo, unusually, does not put any of it on the label.
The ppm number is the input, not the output. Sixteen years in cask removes roughly half to two-thirds of the phenolic total from Lagavulin’s malt; ten years does less removal to Talisker’s, but Talisker was starting from a much lower base. The bottle in front of you is not carrying 35 or 20 ppm on the palate. What is in the glass is the phenol library that survived cask oxidation, wood adsorption and the angels’ share, and each library reads differently because the input chemistry was never the same to begin with.
Two condenser policies, two ways of treating copper
If the peat chemistry decides the kind of smoke, the condensers decide how much sulfur and heavy compound gets through into the new-make spirit.
Lagavulin condenses through modern shell-and-tube condensers: hundreds of small copper tubes with vapour passing through them and cold water on the outside. The surface area of copper in contact with the vapour is large, and copper strips sulfur compounds — the dimethyl sulfides and mercaptans — off the new-make with high efficiency. The result is a cleaner, more textbook peated spirit before the cask has done any work.
Talisker still runs the 1830 spec: five worm tubs — long copper coils sitting outdoors in cold water tanks. The copper-to-vapour surface area is roughly a fifth of what you get from a modern condenser of equivalent throughput. Sulfur compounds pass through with less scrubbing, and land in the receiver. That is where the pepper signature lives. It is a nineteenth-century engineering decision, sized in inches, that still determines what the bottle smells like today.
Both distilleries take a wide cut on the spirit run — Lagavulin from roughly 72% ABV down to 59%, Talisker slightly wider on both ends — but the copper contact difference is the primary lever. Talisker’s wash-still lyne arms rise in an inverted-U before dropping into the worm tubs, and a purifier pipe returns the heaviest condensate to the pot: two more nineteenth-century flourishes that concentrate the volatile compounds becoming the pepper. Lagavulin has no purifier and no inverted-U. What sulfur it has left in the spirit is what the shell-and-tubes failed to catch, which is almost none.
You can hear this in the glass without a chemistry degree. Lagavulin’s smoke reads clean and coated — smoke as an oil that sits on the tongue. Talisker’s smoke reads brittle and prickly — smoke as an ash that scrapes at the mid-palate. Neither is better. They are two philosophies of how much of the pre-cask spirit to let survive.
Two cask assemblies, two sweetnesses
The cask policies then finish the divergence.
Lagavulin 16 is assembled from refill European oak sherry butts and refill American oak hogsheads, roughly seventy percent sherry weighted, with no first-fill in the sixteen-year expression. Refill wood contributes structure and slow, dark fruit rather than a wall of vanilla or a fresh Oloroso paint job over the peat. The sherry side reads on the palate as background dried fig and salted caramel, not as raisin syrup. It is a policy designed to let peat and fruit share the glass without either painting over the other.
Talisker 10 is assembled from refill ex-bourbon casks with a smaller supporting fraction of refill sherry. American oak dominates. The vanilla-and-honey layer is louder than at Lagavulin, and the sherry component contributes little more than a background structural weight. Colour is pale amber against Lagavulin’s mahogany. The palate carries honey and orchard fruit under the pepper rather than dried figs and chocolate.
Both are natural colour. Neither carries E150a caramel colouring. The colour difference is doing entirely honest work: darker cask influence in one glass, lighter cask influence in the other.

Both poured at room temperature, no water in the first pass. Lagavulin 16 at 43% ABV, Talisker 10 at 45.8% ABV. Ten minutes to open.
Lagavulin 16. Colour, mahogany-amber, catching the bar light the way weak black tea catches a lamp. Nose, iodine at low concentration, creosote from a treated post, dark chocolate melted onto a warm spoon, dried figs from the refill sherry butts, wood smoke that has drifted a long way over a beach before reaching you. Palate, mouthfeel heavier than 43% has any right to be, first sweetness from the refill sherry (toffee, dried fruit), then a mid-palate turn into bitter chocolate and peat oil, then a slow warm-woody finish. Water at five drops loosens the front layer and lets the fig come forward without diluting the mid-palate. Finish, long, salted caramel and iodine receding in slow steps. What lingers is the ember smell from a fireplace ten minutes after the last log has burnt down.
Talisker 10. Colour, pale amber against Lagavulin’s mahogany. Nose, a fishmonger’s display thirty seconds after the fillets have been replaced on the ice — that brine of salt plus chilled iron plus a far-off iodine — with a pepper note that is the dusty middle of a peppercorn cracked twenty minutes ago rather than the bright top of one cracked now. Underneath, honey and cool ash. Palate, mouth-coating and oily, then an explosive white pepper turn in the mid-palate, then a slow retreat into honey and brine. Water softens the brine and opens the pepper into something closer to allspice. Finish, medium-long, peppery warmth with faint iodine underneath. The finish stays in a different register: Lagavulin’s is coated and sweet, Talisker’s is dry and stinging.
The two glasses do not fight. They occupy different chairs.
If you are trying to expand a peated shelf that currently holds only Ardbeg 10, Lagavulin 16 is the direction to move for sherry weight and body, and Talisker 10 is the direction to move for pepper and worm-tub sulfur. If you already own one, the other is not a redundant purchase: it is a demonstration that “peated coastal” is a marketing category, not a chemical one.
Which to pour when
Lagavulin 16 is the after-dinner pour. Its refill-sherry sweetness sits well against dark chocolate, a hard aged cheese (mimolette, Comté), or on its own in a chair after the plates have been cleared. It rewards ten minutes of nothing else on the table. It does not pair well with strong food during the meal, because the peat-oil coating fights other fats.
Talisker 10 is the with-food pour, or the before-dinner one. Its pepper and brine work with raw oysters, cured salmon, smoked mackerel, and any grilled fish that has been salted heavily. Its bottling strength (45.8%) means it holds up against food better than Lagavulin’s 43%. It is also, honestly, an easier weekday pour: it doesn’t demand the concentration Lagavulin does.
Price, in Tokyo retail this year, runs Lagavulin 16 at about ¥8,500-10,000 and Talisker 10 at about ¥5,500-7,000. UK retail is roughly £75-90 and £42-55 respectively. Per year of stated age, Talisker is the cheaper glass, but the two are not substitutes.
What each bottle is a record of
At the end of the counter that December evening, both glasses were about half full. The bartender, who had been listening to me try to write the second half of this article out loud, offered his own summary. “One is what happens when a man refuses to change something for fifty years. The other is what happens when a company refuses to change something for a hundred and ninety.” That is closer to the truth than most back labels manage.
Iain McArthur has been at Lagavulin for fifty-three years, deciding every day not to change the phenol, the cut point, or the cask assembly. The MacAskill brothers built Talisker in 1830, and their worm tubs and 2:3 still ratio were rebuilt to exact specification after the 1960 fire because a Distillers Company Limited executive, sometime in 1961, decided that modernising the plant would kill the spirit. Two whiskies at the same table, in the same bar, in December. One carries fifty years of one man’s consistency. The other carries a hundred and ninety years of a company’s stubbornness on behalf of two long-dead landlords. Neither is better. Both are the record of what someone, somewhere, refused to change.
